Turkey, Sweet Potato and Apple Breakfast Hash

This is one of my favorite little simple recipes that is very inexpensive and takes hardly anytime to make.  Plus it only uses two skillets so you don't have to mess with preheating an oven or cleaning junk off of a casserole pan.  The turkey and bacon grease give you protein and fats that keep you satisfied longer and more sustained energy, while the sweet potato and apple give you some healthy complex carbs and fiber.  A pretty well balanced little meal.

  • 1 pound Ground Turkey or Breakfast Sausage
  • 1 large Sweet Potato
  • 1 large Red Apple
  • 3-4 tbsp Bacon Grease or Lard
  • 1/4 cup Spinach
  • 1 tsp Salt
  • 1 tsp Rosemary
  • 1 tsp Thyme
  • 1/2 tsp garlic
  • 1/2 tsp Pepper
  • 1/2 tsp Sage


  1. Cube the sweet potatoes and apples into about 1/2" in size.  Chop the spinach.  

  2. Using two cast iron skillets, put a generous tablespoon of bacon grease/lard into each and heat to medium-high. Put the ground turkey into one skillet and the sweet potatoes (not the apples yet) into the other skillet.

  3. Add in your seasonings, seasoning both the sweet potatoes and the turkey liberally.

  4. Cook the turkey until it is cooked through (5--7min). Cook the sweet potatoes until they begin to soften (7-10min).

  5. Combine the sweet potatoes and turkey and lower the heat to medium-low.

  6. Add the apples & chopped spinach into the skillet with the turkey and sweet potatoes. Add another generous tbsp of bacon grease or lard.

  7. Cover the skillet and cook on medium-low until the apples have softened (5ish min)

  8. This recipe is very easy to double or triple and then store for leftovers
